Fresh seafood products harvested by Indonesian fishermen are known to have healthy attributes that will bring positive effects to the human body. Indonesian seafood itself has gained popularity among seafood lovers around the world, with the demand for fishery products from the country growing every year.

Harvesting Process for Fresh Seafood Products
In order to preserve seafood sources from the Indonesian ocean, the government keeps a strict rule for local fishermen to harvest fresh seafood products from the sea. One of them is through the utilization of eco-friendly fishing gears.
There are several criteria for the gears that need to be met by our local fishermen, including:
- The gear needs to have a high selective attribute, which means it needs to be able to release smaller fishes that haven’t met the industry standard.
- The gear doesn’t destroy natural habitat, the utilization of fish bomb for harvesting is strictly prohibited since it will harm the sustainable fish resources.
- The gear doesn’t have negative attributes for humans, whether the possibility to harm the fishermen or cross contamination from the gear.
- Lower bycatch possibility from the usage, which means the gear shouldn’t produce natural waste that will jeopardize Indonesian biodiversity and water ecosystem.
- Higher quality of fresh seafood products, that will contribute to the increase of product’s pricing points on the market.
Besides the aforementioned criteria for fishing gear, the Indonesian government also commits to provide equal opportunity for the fishermen in various scales, big or small. The commitment is reflected through the Minister of Fishery of Fishery and Marine Affairs Decree No. 18/2021 that explains about fishery harvesting routes for big and small size fishermen boats.
Through this decree, the government arranges the maximum allowed fishery harvesting for small boats up to 12 miles from the coastline. Meanwhile, bigger boats aren’t allowed to harvest fresh seafood products around the area below 12 miles from the coastline, which will harm fishery resources for smaller fishermen groups.
Freezing Process to Maintain Seafood’s Freshness
Currently, there are 3 methods for freezing to maintain fresh seafood products. These methods typically used by Indonesian seafood exporters in order to preserve the quality of the products until it reaches the destination, which included:
- Blast freezing
The seafood freezing using this method includes the process of blasting pressurized air with temperature below -40° Celsius into a conveyor chamber. This process will instantly freeze fresh seafood products, so it can be transported through the cargo.
- Contact freezing
The freezing process using this method is entirely different from blast freezing. Before being transported, fresh fishery products will be on the surface of metals with low temperature that will slowly freeze the products.
- IQF freezing
Individual Quick Freezing (IQF) is a method to freeze fishery products by using the airflow with low temperature circular motions while the fishery product is also advancing through the freezer towards the exit end.
