The flesh of the fish should be firm yet elastic, springing back when pressed gently with the finger. If the flesh becomes soft and slips away from the bone, it is not a fresh fish. Characteristic colors and markings start to fade as soon as a fish leaves the water, but the skin should still have a bright, shiny appearance.

• Shellfish

Tiger prawns have bluish colored shells with black lines between the segments of the shell. If there are any black spots on the shell, that prawn has lost its freshness.
